Pan Seared Lemon Butter Barramundi

Ingredients:
2 Trinity Bay Barramundi fillets
2 tbsp butter, 1 tbsp olive oil
2 cloves garlic, minced
Fresh lemon juice & zest
Fresh parsley, chopped
Method:
Pat fillets dry with paper towel. Season with salt and pepper.
Heat oil and half the butter in a pan over medium-high heat.
Place fish skin-side down. Cook for 4-5 mins until crispy.
Flip and add remaining butter, garlic, and lemon. Baste for 2-3 mins.
Garnish with parsley and serve immediately.

Thai Style Ginger & Soy Steamed Barra

Ingredients:
1 whole barramundi (cleaned) or 2 thick fillets
3cm piece ginger, julienned
2 tbsp soy sauce, 1 tbsp sesame oil
2 spring onions, shredded
Fresh coriander & lime wedges
Method:
Place fish on a heat-proof plate that fits in your steamer.
Top with ginger and half the spring onions.
Steam over boiling water for 8-10 mins until flesh flakes easily.
Mix soy sauce and sesame oil; pour over the hot fish.
Top with remaining onions, coriander, and a squeeze of lime.

Ingredients:
2 skin-on barramundi fillets
1 tbsp neutral oil (grapeseed or vegetable)
Sea salt flakes
Lemon wedges for serving
Method:
Crucial: Use a knife to scrape moisture off the skin, then pat bone-dry.
Season skin generously with sea salt.
Start in a COLD non-stick pan with oil. Turn heat to medium-high.
Press down firmly with a spatula for 30 seconds to ensure even contact.
Cook 80% of the way on the skin side (about 6-7 mins). Flip for 1 min to finish.
